Jens Nisson is the director and executive head chef at London-based Bubble Food, a catering company that creates bespoke menus and luxury culinary experiences.

The company specialises in sustainable, refined meals that still offer the familiarity of comfort food – one popular item is its fried chicken doughnut canapé.

Nisson is well-equipped to meet the specific needs of each occasion, from catering large-scale events with 2,000 attendees to designing intimate, interactive dining experiences. After spending time honing his craft as a chef de partie in Sydney, he returned to London to become junior sous chef at the Michelin Guide-recognised Orrery in Marylebone. A decade of working for various catering companies followed; he held roles as an executive chef managing a team and also in research and development, designing event menus.
