‘Only one doorway separates dreams from reality, and that’s courage,’ says Belgian chocolatier Pierre Marcolini, who recently presented hand-crafted collections of chocolates, fruit pastes, macarons, and sumptuous ice creams at The Ned. ‘Each day is a new opportunity to surprise, pushing the boundaries of what’s possible,’ says Marcolini, whose fine creations are almost too beautiful to eat. He’s pursued his passion since the age of 14, and inspired by the artisanal methods of the Lyonese, as well as master pâtissier Gaston Lenôtre. His dedication has meant global success, with over 30 stores in Belgium, Paris, London and Japan, and appearances in department stores such as Harrods.
